Let’s talk about the star of this show for my golden chili oil fried rice, the CHILI OIL.
I am using a very special chili oil that I cannot wait to share in a couple of months, but in the meantime, my homemade chili oil is the next best thing that you can easily make at home!
I always have chili oil in my fridge, as it easily levels up any dish. It is super easy to make, and unlike other recipes, there will be no waste with this recipe. One of my favorite methods of cooking Fried Rice is making “golden” rice.
The “golden fried rice method” is my grandma’s secret trick. Separate the egg yolk and the egg white. Add the Egg yolk to the rice before pan-frying, and mix well to ensure every grain of rice is coated in the egg yolk. This step ensures that fried rice comes out beautifully golden every single time.
We are taking it to another level by adding chili oil; that way, every grain of rice is coated with flavor! Make sure ALWAYS TO USE COLD, COOKED RICE. Using COLD, COOKED RICE is the most important of making fried rice. Cold-cooked rice prevents the rice from becoming overcooked and soggy.

I am keeping it simple today by topping it with a crispy fried egg, but you can add any vegetable or protein you choose. You can personalize your fried rice with proteins like diced chicken, SPAM, shrimp, or tofu. These add protein and texture to the dish. You can also add a colorful medley of vegetables, such as bell peppers, carrots, peas, and scallions provide crunch and freshness.

Ingredients
- 4 Cups of Cold Cooked Rice
- 4 tablespoons homemade chili oil, (adjust to spice level)
- 4 Large Eggs
- 3 tbsp of Butter
- 3 stalks of Green Onion (separate whites and greens)
- 4 Large Eggs
- 2.5 tbsp of Soy Sauce
- 1 tbsp of White Pepper (optional)
- Separate the egg yolk and egg white.
- Add the egg yolk and two tablespoons of chili oil to cold-cooked day-old rice, and mix well to ensure every grain of rice is coated in the egg yolk and chili oil.
- Add 3 tbsp of butter and 2 tbsp of chili oil to a pan. Turn the heat up to medium and add minced white parts of the green onion. Saute for 30 seconds.
- Push everything to the side, and add beaten egg whites.
- Let the egg whites sit for 20 seconds before scrambling the egg whites.
- Next, add the rice, white pepper, and soy sauce. Saute on high heat for 2-3 minutes.
- Finally, add the rest of the green onion and saute on high heat for 1-2 minutes.
- Optional, topped with crispy fried egg, and enjoy!
